Festive Finger Food: How to Transform Christmas Remains into NYE Canapes
What kinds of bite-sized appetizers can I whip up for New Year’s Eve using my Christmas leftovers that will still seem festive?
Party snacks needn't be elaborate, so New Year's presents a great chance to use up what's left. The key rule is to keep things to just one bite—guests don't want to handle a fork. People just want a big hug of comfort food with a decadent twist.
Should you possess a bit of smoked salmon left, layer it on mini pancakes and top it with affordable roe. Small patties are also just the ticket: Whether you've got leftover smoked haddock or hot smoked salmon, fold it through mashed potato, blend with fresh herbs, lemon, and fried leeks, then roll in Japanese breadcrumbs and fry until golden.
You could also have a ball with croquetas. Prepare the white sauce up to days ahead, then use leftover ham, chicken, or mushrooms for the interior. Blitz old bread into crumbs to coat them, then fry. Savoury pastry mixtures are another natural home for those crumbs, or use them as a jacket for chicken pieces. For flavour, just add a bit of lemon zest and thyme, and they'll sing so much more. Incidentally, buttery pastries make superb coatings, too.
One beloved treat at this time of year is a post-holiday sandwich, and that can continue after Boxing Day. Get some holiday meats in an airtight container and store in the freezer. While you're at it, set aside some berry relish and sweet glaze in the refrigerator. When needed, thaw the meat, then place it in a preheated oven with the saved glaze for a brief period. Cool and cut into thin pieces, then arrange on top of some artisan bread and assemble mini sandwiches with lots of tangy sauce. Cut into small squares for a winner.
Leftover turkey, meanwhile, could be transformed into a spicy, crisp salad. You often have a bit of turkey leg left over, and it's ideal for something full of flavour. Shred the meat, then fry it slowly in a pan, and toss with remaining sauce thinned with citrus juice, a dash of soy and a little spicy oil. Garnish with chopped herbs and some sliced spring onion, and present in small lettuce cups.
Revamping Leftover Vegetables
Veg, meanwhile, can be scrubbed up and ready to party with a big batch of bubble and squeak. Combine all your leftover veg with herbs, then season and incorporate a binding agent. Cut out portions to about the size of small rounds, then keep in the icebox. Reheat in a hot oven for a few minutes and finish with your choice of topping—perhaps sliced beef and sharp horseradish. A word to the wise, though: save a stash for brunch the next day.
